Salmon Patties with Broccoli

 

 

Serves 2 (4 crab cakes per serving with 2 cups of broccoli)

​Ingredients:

  • 8 ounces salmon out of a can

  • ½ teaspoon canola or corn oil, and 1 teaspoon canola or corn oil, divided use.

  • ½ medium red bell peppers, finely chopped

  • 12 saltine-style crackers with salted tops, finely crushed

  • 2 large egg whites

  • 4 cups of broccoli

Directions:

  1. In a large skillet, heat ½ teaspoon oil over medium heat.

  2. Cook bell pepper for 4 minutes or until tender, and remove from heat. Transfer to small plate to cool.

  3. In medium bowl, mix together salmon, crackers and egg whites.

  4. Mix in cool bell peppers, and shape into 8 patties (using your hands if needed).

  5. In the same skillet, heat the remaining 1 teaspoon oil over medium heat and cook salmon patties for 2-3 minutes on each side, until golden brown and cooked through.

  6. Separately, boil broccoli until tender.
