Greekie Chicken with Broccoli

 

 

Serves 2 (6 ounces’ chicken with 6 tablespoons sauce and 2 cups broccoli)

​Ingredients:

  • 1-pound chicken tenders, all visible fat removed

  • 1 teaspoon onion powder

  • ½ teaspoon paprika

  • 1 teaspoon dried oregano

  • 1 teaspoon cumin

  • 1/8 teaspoon cayenne

  • 1/8 teaspoon salt

  • 2 teaspoons olive oil

  • 2 medium garlic cloves, minced

  • 3 tablespoons fresh lemon juice

  • 4 cups of broccoli

 

You can buy Hidden Valley Greek yogurt dressing, Tzatziki Sauce, or make your own:

  • 1/3 cup finely chopped and peeled cucumber

  • 2 tablespoons fat-free sour cream

  • 2 teaspoons snipped fresh dill

  • 1/3 cup fat-free plain yogurt

  • 1 medium garlic clove, finely chopped

  • 1/8 teaspoon pepper

  • 1/8 teaspoon salt

  • 2 teaspoons fresh lemon juice

 

Directions:

  1. Preheat broil on your oven. Line baking sheet with aluminum foil and spray lightly with cooking oil.

  2. Using a bowl (none metallic), stir together cumin, paprika, onion powder, oregano, cayenne pepper and 1/8 teaspoon salt.

  3. Rub mixture onto chicken.

  4. Combine 3 tablespoons lemon juice, olive oil, 2 minced garlic cloves, and pour over your already seasoned chicken.

  5. Cover and refrigerate for 10 minutes.

  6. Transfer to baking sheet and discard marinade.

  7. Place chicken in broiler, 4-5 inches from heat source and cook for 8 minutes.

  8. Turn, and broil for an additions 3 minutes or until cooked.

  9. In another bowl, you can prepare your Tzatziki Sause ingredients, or just buy one from the store.

  10. Separately, boil broccoli until tender.
