Greekie Chicken with Broccoli

Serves 2 (6 ounces’ chicken with 6 tablespoons sauce and 2 cups broccoli)
Per Serving

Ingredients:

1-pound chicken tenders, all visible fat removed

1 teaspoon onion powder
-
½ teaspoon paprika
-
1 teaspoon dried oregano
-
1 teaspoon cumin
-
1/8 teaspoon cayenne
-
1/8 teaspoon salt
-
2 teaspoons olive oil
-
2 medium garlic cloves, minced
-
3 tablespoons fresh lemon juice
-
4 cups of broccoli
You can buy Hidden Valley Greek yogurt dressing, Tzatziki Sauce, or make your own:

1/3 cup finely chopped and peeled cucumber

2 tablespoons fat-free sour cream
-
2 teaspoons snipped fresh dill

1/3 cup fat-free plain yogurt

1 medium garlic clove, finely chopped

1/8 teaspoon pepper

1/8 teaspoon salt
-
2 teaspoons fresh lemon juice
Directions:

Preheat broil on your oven. Line baking sheet with aluminum foil and spray lightly with cooking oil.

Using a bowl (none metallic), stir together cumin, paprika, onion powder, oregano, cayenne pepper and 1/8 teaspoon salt.

Rub mixture onto chicken.

Combine 3 tablespoons lemon juice, olive oil, 2 minced garlic cloves, and pour over your already seasoned chicken.

Cover and refrigerate for 10 minutes.

Transfer to baking sheet and discard marinade.

Place chicken in broiler, 4-5 inches from heat source and cook for 8 minutes.

Turn, and broil for an additions 3 minutes or until cooked.

In another bowl, you can prepare your Tzatziki Sause ingredients, or just buy one from the store.

Separately, boil broccoli until tender.
