Chicken in Orange Sauce and a Side

Per Serving

Ingredients:

4 4-oz. chicken breasts (or turkey)

2 navel oranges

1/2 teaspoon paprika

1 medium onion, sliced
-
1/2 cup frozen orange juice concentrate
-
1 tablespoon olive oil
-
2 tablespoons brown sugar
-
2 tablespoons honey
-
1 3-inch cinnamon stick
-
1 cup chicken broth
-
1 teaspoon soy sauce, low sodium
-
½ teaspoon ground ginger
-
4 teaspoon Sherry wine
-
½ cup slivered almond, toasted (optional)
Directions:

Add olive oil to large skillet

Using the skillet, brown chicken and onions for approx. 5 minutes on medium high or until browned.

Sprinkle with paprika

Cut-peel orange and remove white pith, discard. Arrange orange slices over chicken

Mixing in a small bowl, combine juice concentrate, brown sugar, soy sauce, ginger, cinnamon stick, chicken broth, and sherry. Pour over chicken.

Cover and simmer until chicken is tender (Instant read thermometer -center of cut should reach 165F)

Discard cinnamon stick, add ½ cup slivered toasted almonds, and serve
