Chicken in Orange Sauce and a Side

 

 

Serves 4

Ingredients:

  • 4  4-oz. chicken breasts (or turkey)

  • 2 navel oranges

  • 1/2 teaspoon paprika

  • 1 medium onion, sliced

  • 1/2 cup frozen orange juice concentrate

  • 1 tablespoon olive oil

  • 2 tablespoons brown sugar

  • 2 tablespoons honey

  • 1 3-inch cinnamon stick

  • 1 cup chicken broth

  • 1 teaspoon soy sauce, low sodium

  • ½ teaspoon ground ginger

  • 4 teaspoon Sherry wine

  • ½ cup slivered almond, toasted (optional)

 Directions:

  1. Add olive oil to large skillet

  2. Using the skillet, brown chicken and onions for approx. 5 minutes on medium high or until browned.

  3. Sprinkle with paprika

  4. Cut-peel orange and remove white pith, discard. Arrange orange slices over chicken

  5. Mixing in a small bowl, combine juice concentrate, brown sugar, soy sauce, ginger, cinnamon stick, chicken broth, and sherry. Pour over chicken.

  6. Cover and simmer until chicken is tender (Instant read thermometer -center of cut should reach 165F)

  7. Discard cinnamon stick, add ½ cup slivered toasted almonds, and serve
