Cauliflower Power Pattie

​Ingredients:

  • 1 head cauliflower

  • ½ cup cheddar cheese

  • 2 eggs

  • 1/8 teaspoon cayenne pepper

  • Salt

  • Olive oil

 Directions:

  1. Divide cauliflower into florets, cooking in boiling water until tender (approx. 10 minutes).

  2. Drain water and mash while still hot.

  3. Add eggs, cheese, cayenne pepper, and salt to taste.

  4. Over medium-high head in a skillet, add olive oil and lightly coat pan.

  5. Make patties 3 inches in diameter

  6. Cook in skillet approx. 3 minutes, until golden brown on each side.
