BBQ Chicken, Asparagus and Sweet Potatoes



Serves 1 (Make more, just add quantity for each additional person)

  • 1 6-ounce chicken breast

  • 2 tablespoons of BBQ sauce

  • 3 ounces sweet potatoes

  • 12 asparagus spears

  • ¼ teaspoon cinnamon


  1. Preheat oven to 400F

  2. Slice chicken breast into 2 thin pieces. You may also want to flatten with a mallet

  3. Season the chicken breast with 1 Tablespoon of BBQ sauce on each piece. You may also season with any other spice you would like

  4. Cut the ends of the asparagus off, then wrap 6 spears in each piece of chicken breast

  5. Place the chicken on a baking sheet

  6. Bake in oven for approx. 8-10 min., depending on thickness of the pieces.

  7. Wash and dry, then lightly pierce 4 times, put on a paper towel and place in microwave 5 min. then turn and cook another 5 min. Take out, cut and sprinkle very lite with cinnamon (optional).
